Yes. Dolci Frutta is nut-free, gluten-free, and kosher so it’s a great choice for accommodating dietary restrictions and allergies. However, Dolci Frutta does contain milk and soy.

Dolci melting problems typically occur because of two reasons: moisture or scorching: remember to never refrigerate Dolci and always melt it using your microwave’s medium power setting.

General inquiries

Our shelf life is two years. However, we recommend following the expiration date on the Dolci container. If your Dolci hardens during your dipping, reheat it at 50% microwave power for 30 second intervals and stir until it melts back. Be careful not to overheat. If you want to save your remaining Dolci Frutta, let it harden in the container, reseal and store in your pantry.

Melting Problems

If full power is used on the microwave, instead of half power it will almost always burn the chocolate. Or if you tried melting the wafers on the stove top with direct heat (versus, for example, a double boiler), the chocolate may become burned. If the chocolate has burned, unfortunately there is not much that can be done to rectify the situation except to start over.

If any kind of moisture gets into the chocolate it will thicken, making it fudge-like and not ideal for dipping.

It is important to make sure all utensils are dry and the fruit is thoroughly dry before dipping. If moisture becomes an issue, try stirring in vegetable oil or shortening, by the teaspoonful, to thin the chocolate.

Dolci should always remain free from moisture, which is why we recommend that it not be refrigerated at any time.

TIP: If your Dolci got ruined by moisture, there is a silver lining! Turn your thickened chocolate into delicious Dolci Truffles.

Usage

No. Dolci is intended to be heated in intervals at a lower temperature in order to cool as a hard shell on your treats. The microwave is the best way to melt Dolci, the container is even microwavable!

You can use the Dolci Frutta for frozen bananas by dipping the unfrozen banana in the Dolci Frutta. We recommend dipping before freezing because you will have difficulty getting the chocolate to stick to already frozen bananas. Allow the chocolate to harden, then place them in the freezer. We usually recommend cutting the banana in half, or in pieces, sticking a popsicle stick in the base, then dipping.

If you want to achieve that perfect shiny chocolate berry, try stirring vegetable oil into the Dolci Frutta a teaspoon at a time until you reach your desired shine.
